Paleo people – look away now!
I made a cake for a friend’s birthday. It was to share, and no-one but me needed to eat gluten-free… so, I was going to make this cake using ‘normal’ flour.
I had some ‘normal’ flour in my pantry (in case I decided to bake Rick his favourite shortcake – under desserts as Aila’s Shortcake… I can’t figure out how to do the linky thing).
I haven’t baked anything ‘normal’ since I discovered I have coeliac disease (nearly two years ago)… I had NO CLUE that flour would go ‘off’… but, by golly – it does
– that’s not a smell I will forget in a hurry.
So anyway, I ended up making this using (the last of) a bag of gluten-free baking flour I also had in the pantry. I wasn’t sure if it would work, but it is lovely – light, moist and fragrant with lemon. I had a piece… it gave me belly-ache (because the only grains I eat these days are rice, and that – not very often (and frankly, when I DO eat rice – I don’t much like it anymore) and grains are BAD for you people!

LEMON CAKE
160 ml cream

Yum! I love lemon cake, but I’ve never made one myself.
This lemon cake is easy Ei, but… BUT … the more I do this Paleo thing, the more I realise… this kind of stuff… delicious as it is… is just not GOOD for you.

I’d live with the effects of grains, it’s the *sugar* that I can’t get past any more. I recently realised that I’ve officially become She Who Cooks Weird Stuff, but I can’t be otherwise because it either hurts me or doesn’t taste good, or both.
I hope you suffered none of the latter and as minimal of the former as possible from your little slice of lemon-heaven, and enjoyed the party.
Oh me too! – SUGAR! I always thought it would be sugar, that would be the ‘terrible poison’… and of course it is, but… I NEVER DREAMED that it would be gluten (I mean, really wtf IS that??) that would be so very bad for me.
So, I’ve given up gluten (easy – comparatively)… then I gave up the rest of the grains (except for rice) and that was really easy…. SUGAR… I am really struggling and I KNOW I should (is that the worst word ever ‘should’??) – no wonder I drink!
Sorry about the belly ache…but the cake looks delicious. I wish I had a huge, trembling slab of it right NOW.

But, I wouldn’t. Because I am starting to believe in my whole soul – that this is the kind of stuff I should NOT be feeding the people I love… that would be YOU! XXXOOO
Looks delicious Janet! I can still do grains, but I am very careful with sugar. Often times if I make a dessert, I won’t have any – sugar is my enemy so for me it is a very once in a while treat!
I’m working on heading that way too Ina. I’ve just watched the Youtube talk by Dr Lustig, called The Bitter Truth…. VERY interesting…
Looks so very pretty! I don’t have much of a sweet tooth, so I don’t mind indulging with sugar now and then, but I find it interesting how different natural sweeteners have different characteristics.
Lemons are just so versatile aren’t they?
