It’s ‘that’ time of year again – when friends make excuses not to talk to you… in case (!) you talk them into accepting more zucchini…
A little while ago, fellow Kiwi/Paleo Blogger Lynda mentioned on her blog, a recipe I had posted for Nigella’s Lemon “Linguine” using zucchini shoestrings…
Lynda said she’d like to try that idea, but making an Alfredo sauce – with eggs, parmesan, cream and bacon…
I’m here to tell you… GREAT idea! Fry up chopped up bacon (I put some onion in too – apologies to any Italians, who are – come to think of it – probably off saying a few prayers at the thought of alfredo… without the pasta :-)), take the bacon out when it is as crispy as you want it. Melt a little butter in the pan if you need more fat (g’wan – you know you want to! – DON’T forget – fat doesn’t make you fat)… put in your zucchini shoestrings
Wilt them a bit – this won’t take long… In a wee jug, mix up some cream, eggs and parmesan. Take your zucchini pan off the heat (cos you don’t want to scramble the eggs) – Pour in the cheesy mixture and stir – the heat of the zucchini will cook the eggs and make a lovely creamy sauce.
Serve it with the bacon sprinkled on top.

I’m not growing zucs this year because they take up too much room so I have to rely on other people’s generosity – I’ll take as many as they will give me. ๐ Sometimes I even buy them!

Yum! I will make that. Yes, I can get Mark’s website so not sure what the problem is. Try again, I think it was down for awhile if I remember correctly. Do you peel your zucchini first? I see no green on them. Am I meant to be peeling them?
Ok, I’ll answer my own question – were you using yellow zucchini?
They were yellow zucchini ๐ – I didn’t peel them… Thanks for checking that out for me… I have tried and tried (and even sent an email to Mark) Hopefully it will all sort itself out… XO

Delish! I haven’t yet used my zucchini shoe-string maker thingie but this would be a good reason to bring it out. Although, as you know, we are in a zucchini-less time of year around here. And the markets have very tired looking ones lying around. I have been amiking up for it all by consuming alarming quantities of brussels sprouts.XO

Hi Janet! We have a lot of zuchinni at the moment too, but I’m also growing spaghetti squash. Have you heard of it? Its an oblong yellow thingy that you bake or steam whole, then the insides shred into perfect noodles. Mine are just ready to pick this week so I haven’t cooked one yet, but they seem to have great reviews and would be perfect for your paleo diet.
I’ll let you know what I think, but I sure hope they’re good as they’re prolific vines that’s for sure!
I’ve heard of spaghetti squash, but haven’t seen any yet – perhaps I can persuade Rick to plant one next year?? Let me know what it’s like? XO
